LISA'S CHICKEN WRAPS

INGREDIENTS:
1 CAN OF COOKED CHICKEN
MAYO TO TASTE
HALF A GREEN PEPPER DICED
HALF A SMALL ONION CHOPPED OR DICED
1/2 TSP. CELERY SEED
SALT TO TASTE
PEPPER TO TASTE
SLICED CHEDDAR CHEESE
FLOUR TORTILLAS

PREP:
PREHEAT OVEN TO 250.

MIX THE CHICKEN WITH THE MAYO
ADD PEPPER, ONION, CELERY SEED, SALT AND PEPPER TOGETHER
LAY OUT TWO FLOUR TORTILLAS ON A FOIL LINED BAKING SHEET
PUT DESIRED AMOUNT OF CHEDDAR CHEESE SLICES ON TORTILLAS.
SPOON CHICKEN MIXTURE ONTO THE TORTILLAS.
WRAP AND BAKE FOR 10-12 MINUTES.
TAKE OUT OF THE OVEN AND CUT EACH ONE IN HALF.

LOW CARB CHICKEN THIGH RECIPE


 
Olive Oil (OO)
Garlic
Button Mushrooms
Heavy Cream
Marsala Cooking Wine
Chicken Thighs
Salt and Pepper

Heat 2 tbls of OO and add the chicken thighs-I did six thighs
Brown on both sides and remove from heat
Drain the oil and add one more tbls of "new oil"
Sautee garlic and button mushrooms until fragrant, about 3-5 minutes
Add 1/3 cup marsala cooking wine, cook about 2 minutes
Add 1/3 heavy cream, stir and continue to heat until somewhat thickened
Put the chicken thighs back in the pan and cook over low heat until cooked all the way through
Add salt and pepper to taste
Enjoy



PASTA FAGIOLI
INGREDIENTS
1 CHOPPED ONION
3 CHOPPED CELERY STALKS
3 TBLS CHOPPED GARLIC
1TBLS ITALIAN SEASONING
A DASH OF RED PEPPER(CAYENNE)
SALT AND PEPPER
2 CUPS CHICKEN BROTH
16 OUNCE CAN TOMATO SAUCE
32 OUNCE CAN DICED TOMATOES
PASTA(ANY KIND OF SMALL PASTA)
1 CAN CANNELLINI BEANS(UNDRAINED)
PREP
COOK ONION, GARLIC, CELERY, AND SEASONINGS IN OLIVE OIL. COOK UNTIL ONIONS ARE TRANSLUCENT. ADD CHICKEN BROTH, TOMATO SAUCE AND DICED TOMATOES. BRING TO A SLOW BOIL. REDUCE HEAT TO VERY LOW AND LET COOK FOR 1-2 HOURS. ADD BEANS AND PASTA. COOK UNTIL PASTA IS DONE. SERVE WITH GRATED CHEESE AND BREAD OR/AND SALAD.


SOUP RECIPE:
Heat Olive Oil in pan, add onion, garlic, carrots and celery. Cook through, but don't brown.

Combine tomato sauce, diced tomatoes with chilies, red cooking wine or chicken broth, and water in a large pot. Add spices; I like oregano, basil, salt and ground pepper. Add onion, garlic, celery and carrot mix to the pot. Cook on low heat for a few hours.

Add meat and red kidney beans. You can use all kinds of diced or sliced meat. I have used diced ham, sliced kielbasa and the small frozen meatballs. Whatever you have on hand. You can also use red or white beans. Let soup cook on low heat for a few more hours. Stir often, don't let it burn on the bottom. Enjoy with some bread!


GULASH
Ingredients:
1lb. Ground Beef
1 Medium Chopped Onion
1 Can Tomato Soup
1 Can Water
1 Cup Red Cooking Wine
1 lb. Elbow Macaroni
Spices: Garlic, Oregano, Basil, Salt and Pepper-to taste
Instructions:
Brown ground beef and onion in some oil, drain.
Add one can of tomato soup, can of water and half can of red cooking wine. Let cook on low heat for an hour or longer, stirring frequently. Add spices, cook elbows and mix together with the sauce. Serve hot with grated cheese.


PENNE ALLA VODKA SAUCE

Saute scallions and garlic in butter(about half a stick)
Add tomato sauce.
I used around 16oz of marinara sauce-you can use homemade or jar sauce.
Add Italian spices.(basil, oregano, s&p whatever you like)
Add about 1/3 cup of vodka.
Cook for about 40-50 minutes on a low heat-stir often as not to burn the sauce.
Add heavy cream-about 1/4 to 1/3 cup.
Cook about 15 more minutes-you may want to turn the heat up a little.
While your sauce is cooking you should put the penne on. Cook according to package directions. We have been using Smart Pasta lately and it's quite good!
Mix penne with sauce and enjoy!

ITALIAN GREEN BEANS WITH PINE NUTS


Ingredients: Green Beans, Pine Nuts, Yellow and Orange Bell peppers, Garlic, Orange Zest. Steam the green beans in small amount of water (about 1/2 cup for 6-8 min)

In another pan-heat 1-2 tbls of oil(I used oo) add sliced peppers. Add garlic, cook pepper and garlic mixture about 3-5 min. Add Orange Zezt (about half an orange) to the mixture-heat a few minutes Add steamed green beans. Enjoy!


SCALLOP AND PASTA RECIPE

A quick recipe for dinner: melt butter in pan, add olive oil, chicken stock, white cooking wine and garlic. These ingredients do not have to be measured just use equal parts.

Bring this mixture to a slow boil and add desired amount of scallops. I used a little over a pound. Cook scallops arond 5 minutes on each side or until they are cooked all the way through. They should be white in the middle and tender not chewy. Cook pasta. Drain pasta and add to scallop mixture. We had some homemade pasta and this dish tasted like a little piece of heaven. :)
