Things to be happy/grateful for: Weekend trip to PA. Visiting Peddler's Village in PA. Pubs. Old stone buildings. Seeing intricate woodworking crafts. Buying a new mattress set and learning that the bedframe is made from recycled PA Railroad ties. Safe traveling. Being able to take my dog back to the park. There was so much unplowed snow we could not use the park for a while. The National Guard. News and notification systems. Heating systems that vent through the chimney. That all my family is safe. Homemade Clam Chowder. Attending a conference on the new health care law.

Easy Recipe Ingredients Boneless Skinless Chicken Thighs Fresh Garden Salsa Shredded Cheddar Cheese Spray a baking tray with non stick cooking spray. Arrange chicken on the bottom. Pour salsa on top covering the chicken. Place desired amount of shredded cheddar cheese on top. Preheat oven to 350.  Cover with aluminum foil. Bake at 350 for one hour. Enjoy!
